Caprese Salad Stacks with Avocado Spread
My amazingly talented friend, Kristen, stopped by our office today and gave me a few of her garden-grown tomatoes. Again, it made me jealous that I don't have a green thumb but I'm so glad she decided to share the fruits of her labor......
Fresh mozzarella, avocado, basil, an heirloom, a red, and a baguette.
You can probably figure this stack out on your own but just in case: mash an avocado, thinly slice the maters and mozz, chop a few leaves of fresh basil, toast the bread, drizzle with extra virgin olive oil, and dash with salt/pepper. Best if served with red wine and a hunky husband on the side :)
These caprese salad stacks will definitely be invited to our next summer partaaaay. After dinner, I was lazy and stood outside with Salvador while he jumped up and down for twenty minutes trying to get a tennis ball from my hand.....
"Tennis balls make me wanna jump, jump! Woof woof!"
This pom pom can get some major air.
"Ok, I'm over this unfair game. Hand over the ball and nobody gets hurt! WoofieNOW!"
