Doesn't look like Chloe will have a face for very much longer.
Friday night we picked up the Cosbys and headed to R.J. Saxon's for dinner and beers. We walked in the restaurant/bar and immediately saw our friend, Jimmy (which was a saahhweet surprise since he doesn't live in the circle city). Forrest and Jimmy's bromance goes way back - both are from Dothan, went/partied at Auburn, and lived together in Birmingham. We hugged it out with Jimmy, met his parents, chatted for a while, and then kicked them out of their seats and table - jokes, they were finishing up their dinner so it was perfect timing (Good to see your face, Jimmy!!!). We ordered food, inhaled, drank a few brewskis, and ended the night with Jeremy and Kristin at Bullet's.
Saturday morning showed up early - our barking alarm went off at 5:30 am. Forrest made a pot of caffeine and I cut up this....
Never had a star fruit before and don't care for another one...not much taste.
Saturday and Sunday filled up quick - trip to Lowe's, another trip to Lowe's to make a return, Wal-Mart (ugh), Target, Publix, and finally, Chevron where I got ripped a new one (80 miles a day for work - gas prices are killing me).
Tonight I'm cooking an original, unique quesadilla because I'm officially entering my first recipe contest with the spotlight being on sweet taters......
Sweet Potato Quesadilla
1 sweet potato
2 soft flour tortillas
1/3 cup black beans (rinsed and drains)
1/3 cup cilantro (love it!)
1/3 cup shredded cheddar and monterey jack cheese
1/4 cup chopped white onion
1/4 cup chopped roma tomato
1/4 cup chopped green bell pepper
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon extra virgin olive oil
1 tablespoon water
1 tablespoon lime juice
salt/pepper to taste
Score the sweet potato and roast in a 400 degree oven in a baking pan with an inch of water until soft. Turn the oven off and toss in the two tortilla shells until crispy. Next, take your "the-weekend-is-over" anger out on the tater with an avocado musher until smooth...
In a pan, add all the above ingredients and heat on low for 8 - 10 minutes - stir occasionally....
It's time to layer! Warm tortilla, more shredded cheese (just a sprinkle), sweet tater concoction, and close it up with the other tortilla....
Cut into triangles and add your favorite toppings. What's my fav?! Taco sauce, Chobani non-fat plain greek yogurt (tastes like sour cream) and fresh cilantro.....
This Brooklynfied sweet potato 'dilla was delicious!!!!! The sweet tater was a nice alternative to refried beans and added a semi-sweet touch. I told Forrest about this quesadilla idea and saw fear in his eyes...BUT I'm happy to report - he's a huge fan now! Here goes nothing...submitting this vegetarian recipe now....wish me luck!!! :)

I've never tried star fruit either... guess I'm not missing much.

I absolutely hate sweet potatoes and was a little skeptical about trying your quesadillas, BUT boy was I wrong! They are AMAZING!!!!!I was shocked! The best EVER! I can't wait for some more. Thanks for lunch sissy!
